Heirloom Beet Salad for French Fridays



Heirloom beet salad with goat cheese, radish sprouts, icy red onions, pistachio nuts with a honey mustard vinaigrette is on the menu this French Friday with Dorie.  This is a fun salad to make and serve as a starter for dinner or for lunch.  The farmers market had a generous offering of heirloom beets, one that I could not pass up this week.  I followed Dorie's recipe for the vinaigrette and the icy red onions but did my own thing with slicing and arranging the beets.  I also used pistachio nuts, which were good with the soft goat cheese and radish sprouts to offer a small salad on top of the beets.  I love beets in all sizes and colors so this was a really good French Fridays with Dorie week for me.  Each Friday I post a recipe from Around My French Table with an online cooking group cooking and baking their way through Dorie Greenspan's wonderful cookbook.

  2. Patty, where did you find the golden beets? I never see them at the stores! This looks divine and the photos are extra fabulous. Love the radish microgreens on top, well done girl! (did you use a mandolin to get those onions soooo thin?)

  4. Absolutely stunning presentation and photography! I now have heirloom beets envy. :) They are not here yet at the farmers market where I live. The addition of pistachio is a great idea too.

  11. Beautiful! I adore beets and can't really think of any way to go wrong with them. Great idea with the sprouts. I made Dorie to the letter and loved the addition of fresh oregano...probably the one thing I had never done with them before.

  15. This is the most beautiful salad I've seen! Heirloom beets…wow! I passed on this one…after seeing yours I will be looking for heirloom beets so I can put together such a lovely salad…even if it's just for me!! My husband doesn't do beets!

I've ceased apologising for my disappearances LOL but I honestly have been busy with 2 projects so blogging has had to take a backseat.   29. There's nothing better than earthy beets in a salad, and this one is just beautiful. Love the gorgeous layers! I have never used radish sprouts before, how lovely. It was so very good to see you yesterday - so excited to see the macarons you will surely be making in the future (as will I!).

  33. very pretty salad and I know it taste even better - love what you did with the beets and how you made a salad on top... that is something I do not own, a mandolin, but it sure would make cutting 'perfect' slices easier...

    I'm a beet lover like you too. Love the way you've arrange your beets in this dish - simply gorgeous. Great choice on the addition of the pistachio nuts as well, adds colour, texture, and contrast in taste. A wonderful salad to serve to guests indeed if you're looking to knock them off their feet early ;).
