It was a first! My first time to bake Rugelach sliced from a rolled dough spread with Apricot Lekvar, sprinkled with cinnamon sugar, chopped dried fruits and nuts. The slices from the rolled dough were placed in the oven almost naked-just a thin egg wash brushed over the top before slicing and baking. My rolls of rugelach were not rolled in additional sugar and cinnamon as the recipe calls for, a vanity move as I wanted to show off their lovely fruit and nut filling. I raided my quilting fabric stash to use in these photos, I hate to admit it but haven't tackled any major sewing projects since starting Patty's Food three years ago this March! Originally I started posting recipes to keep track of them but after about a year of just sharing recipes I started writing more in my posts and kept on going... Now I'm participating in two online cooking/baking groups, French Fridays with Dorie and Tuesdays with Dorie. Today it's Tuesday with Dorie's turn with Home Baked Rugelach. Just a few notes on my experience with the recipe. I found the cream cheese dough to be tender when chilled and very easy to roll out. The Apricot Lekvar recipe had a wonderful flavor and consistency when spread on the dough but leaked out of the bottom while baking making a big mess on the baking sheets. The filling turned a little fruit leathery after cooling which I didn't expect. The previous times I made rugelach I used jam as the spread on the rolled out dough which in my opinion bakes into a better more tender cookie. So, while I like the idea of making levkar, I wasn't overly pleased with it's texture after baking. Note to self, next time just eat the homade apricot lekvar with a spoon and don't use for baking unless you're making fruit leather, a novel idea!
Isn't this little scrap of fabric cheerful? Seeing this sweet fabric inspires me to start sewing again, especially for my granddaughter Gracie, think of all the outfits I could make and they're calorie free, imagine that! My plan is to share a few recipes from both groups each month plus a few of my own kitchen creations. Patty, rugelach is on my cooking bucket list but I'm still afraid to try them. Yours look so perfect but I'm not surprised.
ReplyDeleteIt's funny, I think a few of us bloggers have all unintentionally dropped a hobby or two because of blogging--glad I'm not alone. Missing some things I used to do, though. Your quilt fabric adds a nice pop of springtime color--pretty!

ReplyDeletePatty, These look great. I think a dusting of cinnamon sugar & nuts would have been preferable to rolling the whole thing.
ReplyDeleteI actually prefer Dorie's other recipe that we bake at Christmas because it's not so sweet and makes far less of a mess. I felt like a lot of ingredients were wasted with this method. I am a sucker for this cream cheese pastry, though!

Hi Patty! I love looking at the cheerful post from the morning! It gives me a great start of the day. I love your choice of fabrics - just perfect for your styling. Your Rugelach looks really delicious and I don't think one plate of those is not enough for me for one serving... I can totally imagine when they came out from the oven! Very lovely treat.

ReplyDeleteI used to sew also. I always preferred crafts as opposed to clothing because I hate to alter. I did enjoy making some outfits for my daughter when she was little, since that didn't entail altering. I'd love to make some for my granddaughter, if I could ever find the time!

ReplyDeletePatty, I have never seen Rugelach shaped this way...it's absolutely gorgeous. I always shape it in a kifli-horn style, but as an unusual amazing roll shape, where you can see the entire filling, It's to die for!!!

ReplyDeleteYour rugelach looks lovely, Patty. I really like the fabric scraps you used in your photos, too. My nieces did the work on this week's TwD post, though I made the lekvar ahead of time for them. They rolled them up the length of the dough, instead of across, so their cookies were more like rugelach pinwheels! Still tasted good, though.

ReplyDeleteYour rugelach came out beautifully. Your pinwheels are perfect. I didn't like the fruit-leather like lekvar that leaked onto the baking sheet, either. Although I agree that the lekvar itself is good enough to eat with a spoon!
