Light Banana Chunk Muffins
Banana chunk muffins are the latest addition to my expanding collection of light baking recipes. I'm exploring another new to me cook book, Light and Easy Baking by Beatrice Ojakangas. Her light baking cook book is filled with simple easy to follow recipes for all the things I like to bake including a chapter on how to reduce fat and calories in your favorite baking recipes. I like to bake for my 'Littles' and they love anything I bake using bananas. Usually that would be something baked with mashed up bananas, like banana bread but this week I tried something a little different with these muffins filled with chunks of not too ripe bananas. This is a simple 'from mixing bowl to cooling rack in under 30 minutes' recipe that the kids loved which makes it a winner in my book! This recipe is also a good way to use of dried fruits or nuts stashed in your pantry and for sure the bananas on your kitchen counter.
Ingredients and Directions for Light Banana Chunk Muffins
Adapted from Light and Easy Baking by Beatrice Ojakangas
1 cup all purpose flour
1 cup spelt flour
1 tablespoon baking powder
1/2 cup granulated sugar
1/4 teaspoon sea salt
2 medium not overly ripe bananas, sliced
1/2 cup chopped dried apples
1/4 cup chopped dried cranberries
1/4 cup chopped walnuts
1 large egg
4 tablespoons unsalted butter, melted
1 cup low fat milk
2 teaspoons vanilla extract
Preheat the oven to 425 degrees
Coat a 12 cup standard muffin pan with baking spray or line with paper baking cups. In a large bowl, stir together the flours, baking powder, sugar and salt. Stir in the bananas, apples, cranberries and walnuts. Mix lightly to coat the fruit mixture. In a small bowl stir together the melted butter, egg, milk and vanilla.
Pour the liquid ingredients into the dry ingredients and stir until evenly moistened. Spoon the batter into the prepared muffin pan, dividing the batter equally between the muffin cups. Bake for 18-20 minutes or until wooden skewer inserted in the center comes out with a few light crumbs.

ReplyDeleteHi Patty! These are great for breakfast! I need breakfast right away when I wake up, so it would be so nice if I have these muffins ready the next day. I've never seen dried apples before - maybe I'm not paying attention while shopping. Love the ingredients you added in there. Have a great week!

ReplyDeletechunky monkeys... that's what I am calling these beautes as soon as I make them, might have to use blueberries instead of cranberries as that is what I have on hand...

ReplyDeleteOOhhh!! Patty!! I haven't been so excited by a muffin in a long time. This is just what Liv would love and it would be perfect for her long rehearsal nights. I've gotten in the habit of baking for a carpool of 4 girls that I drive on Monday from school to dance and they have just requested banana bread. I think I will bring these next week. Well done!! And gorgeous photos as well.
ReplyDeleteWhy is it that I never have ripe bananas when I need them? Bananas in baked goods are sooo good and these guys get extra points fro being lighter. I guess that means I'd be able to enjoy more than one in one sitting--yay!
ReplyDeleteI like this recipe and I am in the same boat as you and want to keep on baking but could use lower fat recipe to keep things under control, I am going to look for spelt flour at the health food store :)

ReplyDeleteOverly ripe bananas are certainly what makes a great tasting muffin. Adding those tasty ingredients is what makes it special for sure ;o) Oh...and it's considered light...well, that's a real bonus ;0))

ReplyDeleteI'm over here begging for your forgiveness, I just now opened the e-mail that said your b-day was 9 days ago. It will never happen again, I promise! Happy Belated B-day my dear, hope it was a good one. I'm sured the kids loved these, I would have too. I used dried apples in something the other day and I bet they would be a good addition to these. Hopefully after this weekend I should be able to get my life back, hope to catch up soon.
