Cheese Souffle for French Fridays with Dorie

I think this is a really good Friday to share my cheese souffle!  Although the sardine rillettes on the schedule sounded good, I'm saving them for another day.  I made a cheese souffle for French Fridays with Dorie back in March but never posted it as I was feeling conflicted about not sharing the recipe that I used From Around My French Table, as we are asked not to do.  But I think that I solved that problem for now by finding a cheese souffle recipe similar to the one I made on the food network for 'Maman's Cheese Souffle'  by Jacques Pepin.  I have to confess that I used a bag of Kraft Shredded Sharp Cheddar Cheese instead of the Swiss cheese because I had it in the fridge, not very French but we loved it and it sure beats sardines!
I took about half a dozen photos before my souffle started to deflate reminding me once again that nothing is forever but the memories of a good cheese souffle will linger long into the evening.  I served this with a green salad, bread and a bottle of wine which makes a simple weeknight meal but also fancy enough to share with friends at a dinner party.  Dorie mentions that "it's crucial to get your guests to the table before pulling your souffle out of the oven- as the souffle's drama is fleeting".  I'm glad this classic cheese souffle was on our March recipe schedule because this is a recipe I will make again and again, definitely one of my favorites!  I may even break down and buy Swiss cheese for next time.

  7. Good choice over the sardines (eeww), lol. Good call on the cheddar, I think it has more flavor. I was gonna message you last night but our internet went out. Crazy weather, huh. I hope it's clear today, I have to go run errands. Have a great weekend. Next week we will plan something for sure.

  12. I was surprised that something like cheese souffle turned out to be easy enough to make for a weeknight supper. Yours looks so gorgeous in the blue baker with that lovely towel. I just love all those colors together. And, Patty, thanks for sharing about Picnik. I'm sorry I ignored that button on Picasa for so long.   30. Souffle over sardines, hmmm.. You definitely made the right choice ;) I must try my hand at a souffle again, soon - good to know that even Kraft shredded cheese can work. Can't believe that you were able to get these stunning shots before it began deflating!

  31. I have yet to try a souffle and one of my fears is that I wouldn't be able to capture it on camera for the blog just in case it does turn out ok. The main fear is whether I would be successful at trying it at all! Yours looks perfect, though. I would actually prefer the cheddar over the swiss so this is perfect!
