Goat Cheese, Chive & Scallion Muffins


These goat cheese chive and scallion muffins are the latest recipe I've made from the New Southern Garden Cookbook by Sheri Castle,  an inspirational cookbook that is quickly becoming  one of my favorites this Summer.  I have quite a few recipes bookmarked and also made her delicious yellow squash muffins last week.  Imagine a cookbook that inspires cooking from your vegetable garden or shopping at the farmers market, that would be The New Southern Garden Cookbook.  Yes, there is even a recipe for a tomato pie that I will be trying when my own tomatoes ripen.  A large flowering chive plant in my garden, a few freshly dug scallions and my love of soft fresh goat cheese made this recipe a natural choice for me this week.  These muffins are wonderful served warm with a green salad.

Ingredients and Directions for Goat Cheese Chive & Scallion Muffins
Adapted from The New Southern Garden Cookbook by Sheri Castle


Vegetable oil spray
1 cup whole milk, divided
4 ounces fresh soft goat cheese
1 cup all purpose flour
1/2 cup Spelt flour
1 tablespoon baking powder
1&1/2 teaspoons sugar
1/2 teaspoon sea salt
6 tablespoons unsalted butter, melted
1 large egg
1/4 cup minced scallions and chive
1 teaspoon minced sweet basil or fresh dill

Preheat the oven to 400F


Spray the muffin cups with the vegetable spray and set aside.
In a small bowl mix together the goat cheese and 2 tablespoons of the whole milk.
In a large bowl whisk together the flours, baking powder, sugar and salt.
In a medium bowl whisk together the melted butter, egg and remaining whole milk.
Pour the butter mixture into the flour mixture and stir until just combined.  Gently fold in the scallions, chives and fresh herbs.
Spoon half of the batter into the muffin cups and spoon a small ball of the goat cheese mixture on top of each muffin.  Place a spoonful of batter on top of each muffin to cover the cheese.
Bake until the tops are golden and the goat cheese melts, about 20 minutes.
Serve warm.

Makes one dozen muffins

  6. oh goodness, sounds incredible as does the squash muffin.. I was waiting for a picture of it cut in half, I so wanted to see the cheese inside enveloped with the muffin.... but I'm doing a pretty good job envisioning it

  7. My chives died and I can't wait to replace them. They are so good on everything, aren't they? I meant to pick up a couple of new plants at the nursery this week and these sophisticated muffins are a great incentive to make sure I do!

  16. This is the first time I've heard of this kind of muffin. Sounds like melt in your mouth yumminess right there. A great combination of the three main ingredients. Love that you put a whole ball of goat cheese right on top if the muffin mixture. If I had a garden, chives and scallions are definitely two I love to grow. Those muffins sound wonderful and delicious, Patty.

    Been thinking about you. Now I have to get some chives in the ground, so I can make these, love that cheese ball in the center. That book sounds great, I can't wait for the tomato pie recipe. It's been a rough week, but starting to feel better, can't wait for the macaron party.

  20. That's good to know your thought on cookbook! I'm doing sorta research on how people pick their cookbook. These savory muffins sound delicious. I like chive and use it quite often in my kitchen!

  21. I'm loving these!! I've heard of that cookbook, and while the last thing I need is another cookbook, I'd really like to get it! Savory muffins and biscuits are some of my favorite things to serve in the summer. We're still waiting for some nice weather, it's the June Gloom here, grey and dizzly. I'm SO ready for some sun. Heard you are having some warm temps!
